Using "Black" clause like this:
ELEVATION(C) FROM(0) TO (200) Black
you will get a black plot rather than green

FlexPDE uses a spectral array of 64 colors and selects the number of traces necessary for each plot at uniform intervals through the spectrum. One trace falls in the middle of the range, so it is green.

There is no mechanism for changing the table. The BLACK and GRAY modifiers mentioned by Zhang (above) will give you black colors, or you could add fictitious traces to the plot to shift the positions of the colors in the spectral table.

You could also EXPORT the plot and modify the colors with a pixel program like PaintShop Pro.
